Greetings from Kolkata. A very friendly and straightforward Saturday puzzle from Cephas that I highly enjoyed solving and thereafter writing a review of the same for your kind perusal and valuable feedback.

Polyunsaturated, the answer to the clue of 3d, made me inquisitive and I turned to the net to know more about all the types of fats. Basically, there are two types of fats – saturated and unsaturated. A saturated fat does not have any double bond in its chemical structure whereas an unsaturated fat has one or more double bonds. If a fat molecule has one double bond, it is called a monounsaturated fat, but in case it has more than one double bond, it is called a polyunsaturated fat. Unsaturated fats, where monounsaturated or polyunsaturated, are, in fact, healthy fats, since they tend to reduce risk of heart disease, more particularly when substituted for saturated fats. Both animal and plant foods include dietary fats that are a blend of saturated, monounsaturated and polyunsaturated fatty acids in different proportions. For instance, most of the fat in butter is saturated, but it also contains some monounsaturated and polyunsaturated fats. Fats supply calories, help the body to absorb fat-soluble vitamins such as A, D, E and K and provide the essential nutrients that the body needs to function. All foods rich in fat contain a mix of different fats, one of which is polyunsaturated fat. Polyunsaturated fats are referred to as oils. They are found mostly in fatty fish, plant-based oils, seeds and nuts. The two major classes of polyunsaturated fats are omega-3 and omega-6 fatty acids which the body requires for brain function and cell growth. These fatty acids are obtained from the diet as the body, despite capable of making most of the fatty acids, cannot produce the linolenic acid, an essentially fatty acid that include omega-6 fatty acids. Some foods provide a higher percentage of omega-3 and omega-6 polyunsaturated fats than others. The best source of omega-3 acids is fatty fish, despite the fact they do not produce them on their own. Rather, they accumulate them by eating algae and small, microscopic organisms called plankton. Fish such as salmon, herring, sardine, mackerel, trout and bass can add omega-3 fatty acids to one’s diet. Omega-3 fatty acids are found in algae oil, canola oil, flaxseed oil and soyabean oil, but they give a less active form of the fat than do the fish. Omega-6 fatty acids are in vegetable oils, nuts and seeds. The oils highest in polyunsaturated fats include safflower oil, grapeseed oil, flaxseed oil, sunflower oil, poppy seed oil, canola oil and soybean oil. These oils are liquid at room temperature because the double bonds allow the fat to bend and fold. Oil-based condiments like mayonnaise and salad dressings, as well as margarines, are also high in omega-6 polyunsaturated fats. Nuts such as Brazil nuts and walnuts are also rich in omega-6 fatty acids.

The clues that I liked in this puzzle were 1a, 9a, 12a, 15a, 18a, 1d, 3d, 6d and 11d; 3d being the best of the lot.   1. Thanks Rahmat for the comprehensive review of a classic Saturday puzzle, really enjoyable and nicely graded on the difficult-o-meter. Interesting to read about different fats; palm fat has to be the worst, responsible this week for quite the most disgusting box of Cadbury’s Miniature Heroes I’ve ever had – never again! Bring back cocoa butter – saturated or not!
